Dear ACOP Family,

We always miss the snow at Christmas…

But we decorate, get a real tree, and enjoy Abuelita hot chocolate (the hot chocolate you buy—that has a tad of cinnamon flavour). We also enjoy buñuelos (fried caramelized tortillas) while we listen to Christmas music.

We do a lot of our own baking which is especially appreciated by friends and family—as most people don’t know how to bake or even use their oven! So it’s a joy to spend time together as a family—loving and serving those around us.

Good food is always found here! We’ve been invited to eat mole, a dish made from fried chicken (usually their own) and sauce made with peppers and other spices. It’s usually served with rice and homemade tortillas. It’s delicious!

Our family tradition: A Christmas sleepover where we watch Christmas movies and sleep by the tree. It’s always followed by a pillow fight in the morning, and the hope of good chocolate in our stockings, the Canadian kind—Smarties and Coffee Crisps!

During this Christmas season, I (Amber) am learning that God continues to work while we wait—there is beauty and rest in “waiting” times. Like those who were waiting for the Messiah to come…

The simple, humble birth of Jesus was the great rescue we have always needed. He came into a messy world, to help us messy people…

All because of His love for us!

Christmas is a time for miracles, and I am waiting for healing for some health problems—thanks for praying!
